A classic of Lorraine cuisine that has maintained its reputation as a culinary institution, thanks to Chef Janisch Lutz, who has been delighting both locals and visitors to the Citadel for thirty years. The table is beautifully set, the atmosphere is refined, and the plates are meticulously presented: house-made foie gras with butternut squash, hazelnuts, and Parmesan crumble; seared scallops with Dubarry cream and matelote sauce; guinea fowl fillet with cumin-spiced carrots and kimchi-style turnip marinade, and a tartlet with poached pears, vanilla cream, and Belle Hélène-style chocolate ice cream—all part of a delightful six-course meal for €68.
