A classic winemaker's rendezvous on the main Beaune-Chalon road, the Soufflot is a benchmark for fine labels, and the extensive wine list is deciphered with delicious envy. The cuisine is at once simple, expensive and meticulous, with familiar dishes on a €75 menu that serves as a pretext for tasting: asparagus, smoked trout roe and nettles, barbecued sea bream tartare, Tahitian vanilla strawberry milk shake and agastache.
