Michel Cassou-Debat's restaurant, located in the beautiful, ultra-contemporary complex of the Cité de l'Océan, boasts a luminous setting and an unobstructed view of the Atlantic. All glass, steel and light wood, the dining room exudes a feeling of serenity, well nourished by a bistronomic cuisine that oscillates between regionalism and modernity. À la carte: Thai vegetable nems with curry vinaigrette, langoustine ravioli with shellfish emulsion, stuffed chipirons, lace pig's trotters, farm pigeon with garlic jus and mashed potatoes, passion fruit soufflé.
