Toulouse's gourmets are well acquainted with the jovial Nicolas Servant, who for several seasons delighted them in the kitchen of L'Alouette, opposite the Victor Hugo market. In the autumn of 2025, he embarked on a new adventure with the opening of this establishment, a little way from the bustling Saint-Cyprien district, which bears his name and that of his friendly wife Katie, who works in the dining room. In a dapper setting, around a formidably tempting menu (everything is tempting, especially the canaille register), Nicolas sends out at each service for the twenty or so lucky diners plates in a rustic-chic style that left us all baba with pleasure: "Cervelle de veau croustillante, sabayon moutarde, sauce ravigote", "Conchiglionni farci aux escargots, beurre aux herbes, comté", "Ris de veau, salsifis, noisettes, jus de veau, truffes noires", "Thon rouge ikejime façon Rossini, duxelle de champignons, jus de thon", "Poire pochée, crème d'Isigny montée à la vanille, sauce chocolat". Top-quality seasonal products, original ideas, precise execution, generous portions, meticulous presentation: the two toques are achieved straight away! Two slight downsides: the pace of service was too fast on our last visit, and the range of non-alcoholic drinks needs to be expanded.
