Montauban's finest downtown hotel has revamped its offer, with a tangible 4* standing and a restaurant offering that follows without risk-taking or lack of taste. Chef Matthieu Vandesavel has brought back the classics and regional cuisine at a reasonable price: marrow bone au gratin, Caesar salad, pan-fried cuttlefish, peppers and chorizo, cod and roasted vegetables, linguine with truffle and stracciatella, traditional cassoulet with Espelette pepper, capuchin burger and vanilla crème brûlée.
