Chef's Restaurant
We’ve been closely following Paul Courtaux for ages, and the evolution of this chef from Lozère has lived up to the promise he showed twenty years ago in his bistro in Pézenas. Here, on the shores of the Mediterranean, he devotes himself to authentic cuisine, featuring fresh, skillfully prepared ingredients, with a distinct style and evident expertise: cold fish soup with an emulsion, mussels and octopus with aioli and saffron ice cream, a cut of veal with stuffed eggplant and rich gravies, and classic, beautifully executed desserts, such as rum baba with mascarpone cream or chocolate fondant with vanilla ice cream.
