Chef's Restaurant Regularity is the name of the game at Le Saint-Georges, with a top-quality chef well-versed in the art of pleasing the masses. Paul Courtaux, who used to delight us in Pézenas, has perfectly adapted his offer to the resort, offering quality popu chic in a lively atmosphere, with all the modern panoply of raw, snacked and simmered dishes: tarte fine de boudin, compotée d'oignon au Banyuls, crème à l'huile de truffe, white tuna, zucchini des jardins de Costebelle, bouillon tomate, citron noir, basil and tarte fraise basil in a flawless, if not truly astonishing, ensemble. The cellar is very solid, with a selection of the region's finest names, and the service is excellent, under the supervision of Hélène, the chef's wife.
