Christophe Merotto named his foodtruck "Le Rialto" after the famous bridge that crosses the Grand Canal in Venice, the region where his parents come from. The latter excels in the artisanal production of Roman pizzas, shaped entirely by hand, as his Italian origins dictate. The pizza-maker works with top-quality Italian flour, which he allows to mature over a long period to make it easier to digest and more flavorful. Christophe has imagined some twenty savory and sweet flavors to tantalize your taste buds. On the menu are classics like the Regina or the 4-cheese or more surprising ones like the Euskadi with Basque ewe's milk cheese, black cherry jam and Serrano ham. Even more surprising is the succulent Nutella®-pineapple sweet pizza. Other desserts include a magnificent tiramisù. Every month, the Chef proposes a top-of-the-range pizza with truffle, burrata di buffala..., depending on the season's delights and the mood of the moment.
