A 3* country inn north of Tables, Cathy and Xavier Spadiliero offer a contemporary, minimalist experience based on the Gascon terroir. The result is a wonderful reinterpretation of the classics, with an elegant, coherent setting. Highlights include Pyrenean trout tartare with oysters, cod with Timut pepper, Sarriac lentils with preserved lemons and fennel emulsion, and an all-chocolate cake. Cellar adapted.
