Christophe Cussac does Cussac as well as he has done Robuchon for years. Perhaps even better, given how comfortable he is in this Monegasque palace that has adopted him. His cuisine is racy, technical and brilliant, and he practices it with such mastery that there's no doubt it's not entirely his own. Guests are guaranteed exceptional products, flawless execution, and the pleasure of great service on great plates: lobster lasagne with tarragon, spinach and spianata, saint-pierre and artichoke in a coriander broth, entrecôte with marrow, toast melba with winegrower's sauce, strawberry ricotta and timut. As at l'Atelier, the "fines bouchées" offer an even wider range of tastes.
