Remarkable Restaurant The sea as far as the eye can see, the warm simplicity of the comfortable dining room, the cellar patiently built up with passion and discernment, the fluidity of a charming and stylish service... So many assets that should already encourage you to set off, all business as usual, towards this cape pointed towards the small island of Raguénez. It's a place of inspiration for Jérôme Gourmelen, who offers plant-based, predominantly seafood cuisine, punctuated by the cycles of nature and ultra-local sourcing. It's not a marketing vision. It's a deep conviction that has long been instilled by owner Pierre-Yves Roué. Start with a pleasant combination of asparagus from La Torche, a fromage blanc made from ewe's milk, Finistère cow's cheese and sudachi. The pretty pollack steak is brined and cooked at low temperature. It's accompanied by a pressé of caramelized endives, titillated by a hint of roasted praline. An emulsion with notes of vadouvan completes this delicate, well-balanced dish. Racy rusticity for the next sequence: a superb lamb raised in the fresh air and herbs of the Paluds de Trévignon. Cooked for 8 hours, it is paired with black pudding in cromesquis, whose presence is also found in an impeccably reduced sauce. The dessert may seem like déjà vu (but perhaps it's the house's famous "signature dish"?), but its originality and execution always make an impression, combining white and green asparagus, hops, cream and white balsamic vinegar.
