Gault&Millau's review 2025

It's an ideal haven in the heart of the Landes, both literally and figuratively. At Christophe Bourrissoux's, the regional spirit is omnipresent, from the country house decor to the plates full of local produce. The hotel-restaurant has an old-world charm, with woven straw chairs, beams, painted wood and antique furnishings, a peasant and flowery style. On the table, you'll find tradition and terroir, with escalopes of foie gras, duck jus and apple chutney with loupiac, sturgeon with Aquitaine caviar sauce, smoked potatoes and zucchini, duck demi-magret with apricots, wilted carrots and purée, crêpes Suzette flambéed with Grand Marnier. Bordeaux cellar.
