Gourmet Restaurant Philippe Bessière, former chef at Côte Vermeille in Port-Vendres, opened this restaurant last spring in this tastefully restored old house, with a well inside, and a terrace by the plane trees for long summer evenings. The family has taken over, with the son in particular in the kitchen, who immediately surprises us with a cannelloni of raw king prawns, stuffed with crab, yuzu, crunchy vegetables in small cubes, tobiko; a successful dish both in idea and conception; the grilled monkfish tail is accompanied by candied vegetables on a well-balanced Aspres saffron sauce; the dessert revisits a citrus vacherin, in sorbet, compote on meringue in two textures. A very good start, with respect for local produce and a serene, friendly atmosphere in the heart of the historic village.
