Gault&Millau's review 2026

A true mountain bistro, with its authenticity preserved, even if the chic clientele isn't exactly peasant. What's important is that there's something for everyone, in a good mood, thanks to a vast choice and the right regional reflexes: the plank of mountain charcuterie or the organic egg with green lentils, morel jus and foie gras, the frogs' legs or Arctic char, the blanquette or the filet of beef Wellington, now a Refuge staple. You can drink what you need in the region, and even sing along to the Grand Marnier soufflé or tarte tatin.
