Gault&Millau's review 2026

Le Rabelais enjoys a pleasant setting in the heart of the village of Saint-Chamas: outside, you can sit on a small terrace lined with pretty trees; inside, the vaulted room with its exposed stonework, a former mill full of character, offers an authentic atmosphere. The cuisine is seasonal: in summer, apricots are served as starters with foie gras, and as stewed desserts with pavlova. The inspiration is Mediterranean, with fairly classic combinations, but the products are seasonal and well chosen. We particularly appreciate the pan-fried lean served with its fine niçoise sauce and reduced fish juice. The presentation is sober, if a little basic. The wine list, aptly focused on Provence, is a nice surprise and makes you want to linger over it, even without any advice.
