It's the kind of reassuring figure we like to find everywhere in France: the big brasserie on the square, both generic and typical. The one in Albi is a model of its kind, with its large terrace and cast-iron columns, its wide banner and Art Deco style, its traditional cuisine compiling regional and national classics. Start with eggs mayonnaise, fine oysters from claires, duck foie gras, then sea bream with tarragon cream, linguine, Aubrac beef tartare, duck confit, 5A andouillette, crème brûlée, tarte tatin... Classic cellar.
