Small in size, but legitimately ambitious, with an elaborate cuisine that stands out in this touristy corner of town. Vincent Boucher, who has worked in some of the finest Parisian restaurants, now works with quality Corsican produce from suppliers he knows very well. Sustainable fishing and seasonal produce feed the blind menus priced at €80 and €100. No more freedom at lunchtime, but a good, convenient €39 formula.
