West of Roanne, this 1534 house is as much a moment of history as it is a moment of indulgence, with this beautiful place between past and present. The terrace under the wisteria, the red-brick dining room and the old cellar all exude an authentic soul. Max Reure brings a fine gastronomic flavor to life here, with confit leeks, redfish and guanciale gravelax, Japanese broth and harissa-spiked mayonnaise, open ravioli of prawns and squid ink, pig's trotters stew, lentils, carapace jus, Iberian presa, roasted Jerusalem artichokes, puffed quinoa, celeriac and vegetable jus, a retelling of the black forest. Good service.
