Right next to the Canal du Midi, David Celayeta's restaurant is a must-see in the area, for the contemporary elegance of its surroundings, which use above all noble materials and natural colors, in a pleasant, intelligent harmony. On the plate, the chef's cuisine is based on produce, with vegetables sourced from the estate's kitchen garden, and a locavore approach to cooking. The compositions are as graphic as they are well thought-out, presenting a very fine bistronomy, such as the burratina starter, a declension of liquoriced cucurbits and pickled oyster mushrooms, the snacked tuna, Castelnaudary bean hummus, fennel and sauce vierge, the veal entrecôte, tartufata and artichoke stuffed conchiglionis, and finally a roasted apricot tartlet, mousse with Blanquette de Limoux.
