In the heart of Val-d'Isère, the Dubai of snow, it's becoming increasingly difficult to slalom between the pop-up chefs who come to sign cards without even cooking a single dish. A passing gastronomy, more photogenic than digestible. Fortunately, here at Les Barmes de l'Ours, Antoine Gras keeps a watchful eye on things, with the complicity of his boss, who loves to eat, especially good, gourmet food. So, logically, La Rôtisserie is the place to be. Just take a look at the dining room: a clever mix of well-heeled boarders and out-of-towners seeking refuge from the bland, impersonal menus, where you eat the decor before you eat the plate. Starters focus on good, simply cooked produce: Savoy snails, herb ravioli served in a delicate parsley broth, frog and crayfish vol-au-vent. We love this gourmet "sauce à manger", generously sprinkled with crayfish. Connoisseurs will undoubtedly choose the marrow bone, accompanied by mustard toast, with no frills or pretences. On the main course, vegetarians are not forgotten, with a vegetarian pot-au-feu or a gourmet polenta with mushrooms and chestnuts. But the main attraction is the traditional dishes, pampered and seared in a magnificent rotisserie: Galician rib of beef, veal kidneys with mustard jus, or veal sweetbreads topped with a comforting meat jus. Here, nostalgia is a cooking technique. For fans of Savoyard cuisine: the generous potée will satisfy every appetite, even those who have come with a solid winter workout. The dessert buffet is the only option on offer in the evening, but the choice is wide. From fruit tarts to "very vanilla" flans, don't miss the exquisitely light citrus and coconut entremets. On the other hand, the chou praliné doesn't seem to have enjoyed the dry air of altitude: it lacks a little gourmandise. Finally, the wine list is undoubtedly one of the least expensive in Val-d'Isère. There's something to suit every taste and every budget, proving that luxury here doesn't have to come with a hefty bill.
