Roland Gallo could inscribe on the pediment of his Papagallo, "Here, the Gallo's true Sicilian pizza", such is the impact of this dough and topping on generations of holidaymakers. All those who first accompanied the Vieux Sauvaire for decades still know the joy of finding this unique pizza as it has been for sixty years. The success continues on the port of Bormes, with today's other specialties, salt-crusted bass and linguine in a parmesan wheel. Other more contemporary dishes fill the menu (tuna tataki, octopus carpaccio), with the essentials happily preserved, right down to the lemon and apple tart that closes the ban with the same pleasure. The wine cellar is staffed by friends from the region, and the service is always friendly and well briefed and supported by Roland and his brother Daniel.
