They don’t run around as much as they did when they were 15—that’s a fact. But Daniel and Roland Gallo, the two brothers who carried on the family business started sixty years ago, are still the driving forces behind this one-of-a-kind establishment, which has moved several times while retaining all its loyal customers, including those from the very beginning who used to climb the winding roads of the Maures to reach a rare paradise of wood-fired pizza. The pizza and its secret recipe are still very much here, unique and delicious, joined on the menu by tuna carpaccio, sea bass in a salt crust, spaghetti in a wheel of Parmesan, and the must-try tarts—lemon or apple. The setting has changed—it’s been located in the port of Bormes for a few years now—but the warm welcome, kindness, expertise, and loyalty have remained, much to the delight of all its fans.
