Gourmet Restaurant It's renewal time for this beautiful 16th-century mill on the banks of the Eure. Franck, Mickaël and Stéphane and their chef - Paul Defrance, who has just handed over the reins to his second-in-command, Vital Rozet - are turning the place around, in search of a terroir that's a little mannered, but full of goodwill, and that Chartrains clearly love. In this dining room, with its tables squeezed together on a pretty, uneven pavement beneath the beams, we love mousses and mousselines, and originally processed products. The rabbit in jelly with mustard and beluga lentil cream before the Bremen shiitake and oyster mushroom mousseline confirms this desire, before the parsnip and chocolate tartelette, which works a little less well. Serious, young, diligent and well-directed service, a rather modest and classic cellar with a small selection by the glass.
