This is indeed the most modern restaurant in town, while maintaining a familiar, accessible cuisine, with plates that are refined in presentation and accompaniment: cod croquettes stuffed with fine shrimp piquillos espuma d'aïoli, pot-au-feu de paleron écume pain brûlé consommé oignon, poire confite sirop gingembre ganache chocolat for an interesting sequence at €45 (expect to pay around €60 à la carte). Well-chosen regional wines (Gigondas des Bosquets, for example), professional service.
