The establishment continues to enjoy an excellent reputation among the people of Reims, who know the seriousness and consistency of the house. Under the direction of Benjamin Andreux, the establishment has been modernized, offering contemporary gourmet cuisine. On the €65 menu: organic egg yolk confit, peas, shredded bottarga and lovage oil; flaked squid, vegetable bolognese and ebony sauce; Champagne poultry stuffed with summer vegetables, chicken sauce; roasted Camargue apricots with Champagne acacia honey, infused with fresh rosemary. Blind menus from €90 to €230.
