Gourmet Restaurant The classic of classics, the Mercière on rue Mercière, an archetypal Lyonnais bistro that has evolved with the times to meet growing tourist demand. Jean-Louis Manoa has turned it into a full-service restaurant that caters for all tastes, and the Lyonnais themselves are loyal to it, choosing from the seasonal menu of Lyonnais delicacies and bistro classics: salmon rillettes, brioche sausage, snacked octopus with ink risotto, blanquette de veau grand-mère, farmhouse poultry supreme with yellow wine sauce. Plates and service are equally well cared for, and there's plenty of choice, right down to the desserts and cellar.
