Philippe Hardy and his wife Nadia have left their mark on the region's gastronomic landscape over the past thirty years, in an original, personal and unique way. The chef is uncompromising in his choices, and was one of the true pioneers of what some have misinterpreted as "locavorism". Philippe has always worked with fishermen, breeders and growers to promote his region and his exclusive vision of a made-to-measure terroir. Wise in his pricing, masterful in his techniques, from the highly fashionable lacto-fermentation to the use of ikéjimé fish, he offers seasonal menus in keeping with his vision of simplicity and precision: squid petals with melting celery and emulsion, sea bass in a dress of chard and herbaceous foam, matcha tea grapefruit and rose geranium dessert in the very attractive menu at less than €60, lobster and pigeon enter through the big door in a fine proposal at €94. In the dining room, Nadia's personality and spontaneity are matched by her natural whimsy and empathy. The cellar is very extensive, as the chef is also a brilliant connoisseur on the lookout for virtuous winemakers.
