Chef's Restaurant The experience at Philippe Hardy's is never an ordinary one. You're in Normandy, close to the sea, in the Manche countryside, and therefore a little bit at the center of the universe, as products are in profusion. The chef takes center stage, turning conventional wisdom on its head, imposing his vision and style, revisiting and combining flavors as he sees fit: mackerel from a small boat, beans glazed with roasted barley, button mushroom, thyme emulsion, low-temperature monkfish, variation on glazed fennel carrot, Cimes pepper and fish stock reduction, Roussillon apricot, common hogweed and orange blossom. This €56 sequence is a good initiation, giving the desire to return for a more in-depth exploration, with Blainville lobster in the €90 formula, or in the seven-course Grand Voyage at €129. An equally personal atmosphere created by the chef's wife, and a remarkable cellar, forged by an enthusiast, with over 200 references.
