Gourmet Restaurant Perched in the heart of William the Conqueror's castle, this is a well-protected address, championed by Vincent Vidal, with a raw charm in keeping with the lines of the fortress and a rooftop above, ideal for a drink at the summit. The table has well-nourished ambitions, elegant plates interpreting the market with a marked personality, zucchini marmalade, fresh goat's cheese espuma perfumed with gorilla pepper, garlic bread leaf and sage powder, fillet of sea bream steamed in a Viennese crust, revisited with wild fennel, glazed fennel, Nantais butter, fennel oil and Normandy pissaladière, Ruault's unmissable Caen-style tripe, apricot-rosemary clafoutis, almond cream and apricot sorbet. Fairly standard cellar.
