Le Malu cultivates a rare form of discretion. Housed in a former Napoleonic-inspired shooting range, the table seats just a dozen and operates as a duo, with Marianne in the dining room and Ludovic in the kitchen. A configuration that imposes a short menu, but above all guarantees true mastery. The cuisine focuses on the essentials: the product and the precision of execution. The pan-fried foie gras, perfectly cooked, finds its balance thanks to a well-reduced gastrique and gourmet salsify. The sea bream, cleanly cooked and generous, is accompanied by precise work with Jerusalem artichokes, onions and seaweed. The dessert, based on clementine and chestnut, seduces with its play of textures and masterful delicacy. In the dining room, service is attentive and precise, with no fancy tricks. The pace is steady, sometimes slow, but consistent with the spirit of the place. An intimate, serious address, where the limited menu is a guarantee of consistency and personality.
