Remarkable Restaurant Behind this slightly misleading name, Tristan Robreau has been weaving a cuisine d'auteur, at the crossroads of France and Asia, since 2012, in a discreet townhouse on the quays of Orléans, facing the Loire. Nourished by his travels, the chef offers a refined, uncluttered repertoire, built on the intensity of juices, the precision of cooking and meticulous balances. The four-course menu, though seductive in its intentions, may leave the most demanding gourmets wanting more. It's in the seven-course tasting menu that the chef's cuisine fully expresses itself: dense, personal, coherent and excellent value for money. A few memorable highlights: red mullet in kabayaki, lacquered with a concentrated juice with Asian accents, topped with fried capers and crispy skin, between finesse and umami. Then roasted sweetbreads, with smoky, peppery notes, accompanied by superbly mastered glutinous rice. For dessert, simple fresh strawberries, awakened by tandoori powder and crushed pistachios, complete the experience without heaviness. In the cellar, there's no encyclopedic catalog: a tight, personal menu that opens up to international markets (Chile, New Zealand, for example) while remaining consistent with the culinary approach.
