Stability and confidence: this Lièvre Gourmand, on the banks of the Loire, in its singular style, remains one of our Orléans favorites. The place has so much cachet and the chef's cuisine is so assertive that it's hard to resist pushing open the door. To rediscover this distinction, as much in the welcome as in Tristan Robreau's plate, which proudly bears his three toques: scallops in tempura and horseradish, chawanmushi haddock sea urchin, sea bass oysters and galanga, sweetbreads glutinous rice, hot grapefruit soufflé... Prices are staggered within a vast menu from €82 to €116, with a well-stocked regional wine cellar offering excellent advice.
