A vast annex of the château, tastefully renovated in contemporary loft style, houses the second restaurant of the legendary Domaine des Crayères, set in seven hectares of lush parkland. Whether on the terrace on sunny days or in the voluminous glass-walled dining rooms, you'll be greeted by a top-flight team who skilfully run a permanently full service. The open kitchen, overseen by chef Christophe Moret, is just like the place: precise, clean and intelligent. There's no caviar, just finely smoked herring on two-textured beet, spiced up with horseradish, before precisely cooked sea trout à la florentine, accompanied by vegetables of the moment in a vinegar sauce; the chef's dessert highlights a candied pear on a bed of chocolate, the raw fruit rounding off the ensemble. The young people of Reims, but not only, have taken over this restaurant, whose wine list is richly stocked with champagnes served in magnums. The price-pleasure ratio is obvious, with a €42 lunch and dinner menu for a cuisine that makes the most of the produce.
