Gault&Millau's review2026
This century-old institution lives on under the watchful eye of Paul and Élise Fabuel, working with respect and intelligence to preserve the memory of the place. It's not just a remarkable place, with its greenery and bourgeois charm, but also a place where fine bourgeois cuisine is maintained, blending noble products with today's ideas. There's the interesting work on crab with sake and buckwheat, sorrel-basil ice cream, duck breast, beet, rhubarb chutney, olive and lime jus, a variation on Moselle rhubarb, white tea and olive oil. General cellar.
