Yannick Duc is committed to working with noble products, which he often shakes up with just the right touch. And even if certain dishes are the same from one year to the next, mastery and pleasure go hand in hand with a touch of originality: scallops in carpaccio, horseradish, beet, black radish, dried ham, undressed lobster, green curry ravioli, emulsion of pressed carapace, coconut milk curry, nest pigeon from Dublanc, dates, arabica juice, brown mushrooms, cébettes, chestnut leaves with black lemon.. Logically high prices given the products used, desserts of the same standard (dark Santo Domingo chocolate, praline, caramel leaves, tonka beans, iced caramel), a varied cellar of nearly 200 references.
