Tucked away between the Grande Rue and the covered market, this charming bistro has held its place for over ten years with remarkable regularity. Laëtitia and Stéphan continue to revisit regional recipes with a modern twist: mousseline of Jura trout with baby vegetables, mint pea gazpacho, herb salad, trout roe and Pain culminant chips, market fish, asparagus duo, hollandaise sauce and pommes dauphine, Vincent Perrin's confit shoulder of pork, Champdivers lentils, cancoillotte emulsion and Morteau chips, hot soufflé with yellow wine and walnut ice cream.
