Remarkable Restaurant It's the favorite address of Monegasque epicureans: a little less regal than the Louis XV in general appearance, service and cuisine, but just as princely in its welcome, tradition and good taste. Dominique Lory, who oversees the entire restaurant operation, is at the helm and keeps a close eye on the coals, one of the major ingredients of this remarkably well-cooked cuisine. The setting is quite exceptional, with a long gallery of bay windows overlooking the Mediterranean from the 8th floor, facing the Rocher, and an open roof, as at Lasserre, offering a view of the sky, whether azure blue or starry. And the cuisine ranges from well-tailored, Ducasse-style gastro - the beautiful langoustine with cordifole vinaigrette or the gamberoni with Lantosque coconuts and citrus flavors - to well-presented regional fare (the thorny artichoke with truffle cream and trévise blackcurrant condiment), to transcended tradition (a beautiful version of duck with turnips and citrus fruits and a magnificent reduced jus) and a few exceptional meats (Angus, Jersiaise, etc.) worked, of course, on the menu.The meat and poultry, depending on the piece, are roasted or cooked in the Josper. At the end of the meal, the vast majority of diners indulge in one of the five soufflés of the moment. The wine list is not very affordable in terms of the classics, with a few local or Rhône wines at around €100 that the skilful sommelier will be able to find for you.
