The weather can be gloomy or sunny, winter or summer, the room is full and the Gibolin is a delight. You even have to plan ahead to find a seat in this bistro, which is so cosy it could make some people jealous. This is due to the combination of generous bistro dishes and well-filled glasses, a sort of ode to French cuisine, with its meats and offal, proving that you can also succeed without dashi or hummus: lamb brains with capers and shallots, haddock salad, calf's liver with lentils, calf's head with gribiche, bourguignon with carrot purée... We're asking for more, and the party goes on!
