Who says a chef can't invent something new after fifty years? Not Hugues Droz, who, after carrying out major renovations on his hotel-restaurant with his wife, set about completely rethinking his kitchen, putting his customers' five senses to work, with "surprise" plates whose composition can be discovered (or not) by turning over the small cards that accompany each dish. It's a journey that's both fun and educational, sensory and gourmet (our two chef's hats are more solid than ever), which the chef devised with his loyal second-in-command Joffrey Piffaut.
