Chef's Restaurant This Montparnasse fishmonger's institution remains a sure bet, with its Art Deco setting, cosy atmosphere of long-standing regulars, and affable, old-fashioned service that's efficient, well-informed and never shy of a few well-timed touches of humor. Just what you need to whet your appetite, swallow the uninteresting salmon rillette and concentrate on the carpaccio of wild sea bream, yuzu and green pepper (a little fashion doesn't hurt), the pan-fried squid and risotto and the red fruit dessert from the unique Ernest menu with its many extras. Of course, those familiar with the Dôme will tell you that à la carte is the way to eat here, with fresh fish prepared to the highest standards, for just a few extra bucks. A well-constituted cellar, over time.
