Nathalie Borgne and Luc Parmentier's restaurant is a modern celebration of gastronomy, with accents of the Cantal region, carefully composed dishes and three menus at €38, €46 and €56. This time, the fricassee of Burgundy snails, celery confit mousseline and country ham, hazelnut slivers, Brittany scallops pan-fried in semi-salted butter, white wine-lemon emulsion, Ayrens free-range chicken au sautoir, squash risotto with horns of plenty, a chocolate-praline sphere with mandarin coulis, cracker and ice cream.
