Chef's Restaurant In the heart of Aurillac, Luc Parmentier and Nathalie Borgne bring to life one of the prefecture's most pleasant establishments, featuring elegant Cantal cuisine. The 46 € temptation menu includes Limagne duck foie gras royale with gizzard confit salpicon, sautéed veal from the Monts du Cantal, vegetable mousseline and potato blinis, and a salted butter shortbread cookie with raspberry stew and ice cream. Nathalie Borgne's cellar offers a good selection of wines (Mikulski, Albert Mann, Domaine des Soulanes, Miolanne...).
