This single-theme menu is all the more interesting and delicious because it’s the creation of Antoine Westermann, the big-hearted and highly talented chef from Alsace who achieved fame and earned five toques a few years ago in Strasbourg. Today, in a bistro-style setting, both the egg and the chicken take center stage, prepared with imagination and skill: poultry terrine with golden livers, empanadas filled with offal, poached egg with hollandaise sauce, and fine cuts for connoisseurs—Drôme guinea fowl, Alsatian pigeon, Rennes cuckoo, and Gascon rooster—to share among three or four, depending on your appetite. Add to that a weekly menu, an excellent wine cellar, and highly professional service, and it’s no wonder the restaurant has earned two toques.
