Carole Gallo, who grew up and worked in a family of restaurateurs, is realizing her dream of a home of her own. Here, she can develop her own aspirations, short circuits, seasonal dishes and good pastries, without abandoning Papa Roland's specialties (linguini flambéed in parmesan wheel, Norwegian omelette and soon salt-crusted wolf). At lunch, in this peaceful atmosphere in the heart of the village, and taking advantage of the small courtyard-garden on the other side of the street, it's simplicity that dominates: a small fresh salad, sea bream from the Tamaris, a lamb mouse or risotto suggestion, ravioli with pesto. The bill is low, the cellar under construction, but you can drink Madame Dusse's artisanal beer, brewed in the village.
