Gourmet Restaurant A Parisian Becs stronghold on the Saint-Michel side, Le Colvert is run by Arnaud Baptiste, former chef at Les Mérovingiens in Noisy-le-Grand. Arnaud's bistronomic cuisine is centered on the product, always sourced, with a blend of simplicity and effective technique. The menu changes every month, in line with the seasons; white Touraine asparagus à la flamme, egg confit condiment, ponzu-yuzu gel, poultry jus, wild garlic oil, peach of the day cooked in binchotan, miso beurre blanc, watercress, potato ragout, smoked trout roe and tarragon, a quasi of veal from the Basque country with binchotan, parsnip declination, cocoa nib crunch, full-bodied jus and Loutsa coffee cream, a smoked chocolate ganache, streusel, popcorn and Espelette pepper. Well-stocked cellar.
