In the suburbs of Annecy, an elegant restaurant in modern colors offers, in a refined setting with a fireplace and apparent wine cellar, a fine bourgeois cuisine by Pascal Avertis. The ideas are fairly consensual, but hold up well thanks to a tried-and-tested technique: salmon gravelax, refreshed pea, avocado and green apple velouté, redfish bream, chanterelle pickles and crisp vegetables, coconut and ginger emulsion, an Iberian pig pluma, potato feuille à feuille and piquillo condiment... Classic desserts. Nice cellar.
