A close-knit team united around a single goal—to delight guests’ taste buds: that was Jonathan Monpays’ vision when he founded Le Clos d’Haillicourt. Alongside Anthony and Eliot in the kitchen, he promotes locally sourced ingredients by crafting inventive “bistronomy,” such as a pork belly slow-cooked for 10 hours at a low temperature, then glazed and confited at the last minute, served with a generous portion of olive-infused mashed potatoes, or a poultry ballotine with langoustines, seasonal vegetables, and homemade gnocchi. Whether on the wind-sheltered terrace at the back of the restaurant or in the charming Art Deco-style dining room with its large green-and-gold bar and terrazzo flooring reminiscent of miners’ homes, you’ll be charmed by the warm welcome and refined dining experience, just as the Chef learned from the great names of French gastronomy. Every day, a new daily menu featuring a starter, main course, and dessert inspired by classic recipes, which the chefs reinterpret with a few contemporary touches. A must-visit spot right next to the Haillicourt wine cellar, just 15 minutes from Béthune.
