Chef's Restaurant Chefs come and go, but Chapon Fin remains one of the city's most emblematic restaurants, a veritable monument to the extraordinary rocky chaos of the 1920s. Younesse Bouakkaoui took over the reins at the end of 2023, following the departure of Cédric Bobinet. This excellent chef is no stranger: trained at Marx et Rocha in Cordeillan Bages, he raised the Table de Montaigne to two toques and immediately recaptured them here, already offering regulars a patte and a style, as evidenced by the Sarah Bernhardt menu (the name has of course been retained): cream of cauliflower and Aquitaine caviar (a winning duo once invented by Joël Robuchon), foie gras tart with sauternes cream and walnuts, sea bass with citrus agastache and salsify, grapefruit and Madagascar vanilla cream. Good lunch menu at €40, well-stocked service and rich Bordeaux cellar.
