Chef's Restaurant Yoan Delorme and Célia Baudelier, whom we helped to set up via our Dotation pour les Jeunes Talents, have breathed new life into the local gastronomic landscape, until now as sleepy as the surrounding volcanoes. It's true that customers have to deal with the obligations of a unique, hidden menu, but Florent Pietravalle's former pupil's technique and sense of the product more than compensate for this constraint. In the dining room, Célia sets the tempo with a smile and a masterful touch, offering pertinent advice on wine selection.
