Chef's Restaurant In the heart of the village of Sauternes, with a superb view of Château Guiraud, Cercle Guiraud has taken the place of the restaurant Le Saprien, bought by Bordeaux businessman Matthieu Gufflet at the same time as the château. Yoann Amado (formerly of Éric Frechon and Maison Darroze in Langon) has created a menu that is short but leaves customers total freedom (one dish only if they feel like it). With a philosophy of sharing and conviviality, he likes to update the great classics of French cuisine and create original combinations. Young pastry chef Juliette Bonnard takes care of the sweet side, and the wine selection is made by Denis Verneau, MOF sommelier who knows how to bring out the best in Bordeaux at very reasonable prices. The service is cool and relaxed, but efficient and friendly, with the spirit of a contemporary inn both bucolic and chic.
