Chef's Restaurant David Royer is at the helm of this vast establishment facing the beach, under the protection of the lighthouse on Ile Vierge. The reopening after several months' renovation of the hotel section and facade was eagerly awaited. It's still a pleasure to sit in the brightly lit dining room, decorated with a sense of style. The cuisine gives pride of place to local resources, with vegetables playing a major role. Abalone, an emblematic product of the region, is given a convincing treatment. The persillade is "just right", and not overpowering. Cut into thick strips, it's nestled under a pleasant potato cream. As for the lobster, simply and perfectly grilled, it is enhanced by a "crème pincette" (herbs, seaweed and citrus fruits) that is certainly tasty but less seductive than a fine sauce. Accompanying the dish is a bevy of barbecued vegetables (and plants): zucchini, salicornia, fennel... Rhubarb ensures a sweet end to the meal, its acidity well tempered by a pavlova-style cream. While the wine list is not over-the-top, it is nonetheless effective: muscadet from Bernard Chéreau, chinon from Clos du Saut au Loup, grignan-les-adhémar from domaine de Montine... Very young and attentive service. Low prices.
