After traveling, they’ve just opened their first restaurant, seizing the opportunity to take over this well-known spot, tucked away on a small street in the city center. Hereiti Bennett’s warm welcome immediately sets the tone for this beautifully and cozily decorated restaurant. Philippe Perna’s lively cuisine demonstrates a masterful command of cooking techniques and flavor pairings. Take, for example, the perfect red mullet in escabèche, with its perfectly crispy skin, thoughtfully paired with caramelized onions and a medley of cherry tomatoes infused with hints of rosemary. Next, small chanterelle mushrooms are paired with monkfish, which is perfectly enhanced by a lemongrass-scented Nantes butter. As for dessert, which is very well-balanced, it plays on contrasts with candied mirabelle plums, mascarpone, lavender, a crispy gavotte, and mirabelle plum sorbet infused with brandy. The service is charming, and the small wine list is just right. On sunny days, the charming garden is extremely tempting.
