The cuisine doesn't seek out exploits, but sails on simple, buoyant waves, between trend and tradition: tuna cromesquis with exotic flavors, gratin de la mer, braised chuck of beef with wine sauce and spices, parsnip purée, white chocolate mousse with hazelnut praline. The service is top-notch, as is the cellar, with Mas d'Espanet or Mas Brès for the department.
