Chef's Restaurant It was once the home of Eric Maio and his Fontaines d'Aragon. In the mid-2010s, the restaurant was taken over by a seasoned professional, David Carré, a former chef at Lameloise and Les Crayères (Gérard Boyer period), who has preserved the rustic, Provencal soul of the place, while offering classic, inclusive cuisine: soft scallop tiramisu with potato and truffle, monkfish dome with watercress emulsion, pear pistachio entremets and williamine granita in a Carré Gourmand menu at €76. Classic cellar, too, with market menu at €48 for lunch.
