At the brasserie, we're down a level, but enjoy the same Provencal pleasures, with fine regional classics, also by Sylvain Touati. The formula is effective and the execution follows: mussels au gratin with parsley butter, bass tartare, ginger, mango, coriander, vinaigrette, casarecce, burrata, pistachio, confit tomatoes and arugula, veal shank braised like a pot-au-feu and gribiche sauce. Classic desserts.
